Sunday Roast Leftovers

I know the feeling: you opened the fridge door this morning to work out dinner, only to find a bit of pork in there which is too small to feed a family, but too good to chuck away. Well, don't waste it or give it to the dog, make yourself some pork spring rolls for lunch, or for the children to come home to. Here's how:

Leftover pork
Jar/pack of beansprouts (optional)
1 small onion
1 carrot cut into matchsticks
1 courgette cut into matchsticks
1 tablespoon of tomato ketchup or tomato puree
1 tablespoon of vinegar
pinch of sugar or to taste
1 tablespoon soy sauce
1 packet of filo pastry/brick pastry

Fry carrot & onion in a little oil. Add the courgette & soften. Then add the rest of the ingredients and stir through. Allow to cool slightly before stuffing as much into the filo pastry wrap up then bake in the oven until pastry is cooked. If you can't roll like a pro, then make little bags by placing food in the middle them bringing up the edges and sticking them together with egg white or water mixed with a little bit of sugar.
