Leftover Lamb

I have a leg of lamb in the freezer that served my family on Sunday, plus a shepherds pie on Monday. Tuesday I made curried lamb burgers, and they were so nice I thought I would share the recipe. I made 6 burgers and here's what I did:

Cooked lamb pulled from the bone (about 100g)
1 clove of garlic
100g of cooked lentils (from a tin)
2 teaspoons of tomato puree
1 teaspoon of curry powder
1 slice of bread soaked in a little bit of milk
1 egg
Season to taste

In a blender, whizz the lamb and the garlic well. Tip into a bowl, add the rest of the ingredients. Mix with your hands and make into burgers. Place on plate and leave in the fridge for half and hour.

For a healthier option, put burgers under the grill to brown and warm through. For a really tasty option dip burgers in flour, then egg, then breadcrumbs and gently fry until golden brown. Absolutely delicious! 

I served mine with some sag aloo (recipe if you want it - it's really quick and easy) or you could have chips and salad or buttery mash.
