Are you a bit bored with potatoes, rice or pasta?

Fancy something different which the children will love (mine do anyway). Try making gnocchi, which are little potato dumplings. They are so easy to make and are fantastic with your favourite pasta sauce. Try this:

500g baked potato
150g plain flour
1 egg yolk
1 tablespoon of oil

Bake your potato, as normal, in the oven or microwave. Leave to cool slightly as they'll be easier to handle then scoop out the middle into a bowl. Add all the other ingredients. Mix to a dough with your hands. Then break a bit off and roll on a flat surface until it resembles a breadstick or grissini. Cut into several pieces about half an inch long. Leave on a flat floured surface while you do the next batch. * Don't let them touch each other or they'll stick.

When they are all done put a pan of salted boiling water on the heat and drop in your gnocchi, one by one. Cook a batch of around 15 at a time. When they are cooked they will rise to the surface. Remove immediately. (They take about a minute to cook). When all the gnocci are cooked tip them into your favourite pasta sauce that is already cooked and heated up waiting for the gnocchi.

*They can be frozen at this stage but don't let them touch in the freezer. Freeze on a tray then transfer to a bag once they are frozen. Cook from frozen.
