Cooking Tips

A low fat dessert for Christmas or new year's eve? Boozy but low fat!

Fruits of the forest macerated in mulled wine:

1 bag of mixed frozen fruit
1 bottle of mulled wine
Sugar to taste

(Simple Mulled wine recipe
1 unwaxed orange
1 lemon, peel only
150g caster sugar
5 cloves
1 cinnamon stick
A pinch of freshly grated nutmeg
1 bottle of any red wine
Put all the mulled wine ingredients together and simmer very gently for about 20 minutes. Leave to cool. Remove the bits from the wine before using)

Prepare at least two days before eating. Tip all the fruit into the mulled wine and place in the fridge for at least two days. To serve, tip all into a saucepan and gently warm through. Serve topped with some lovely ice cream or cream. Don't throw away any liquid, freeze it and use it in an apple crumble in the near year.

Bon appétit and cheers!
