Traditional English Crumpets

115g (4oz) white bread flour
115g plain flour
1 teaspoon salt
½ teaspoon bicarbonate of soda
1 teaspoon dried yeast
1 teaspoon caster sugar
1 tablespoon sunflower or veg oil
150ml (1/4 pint) warm milk
300ml warm water

For the christmas cake that's gone a bit hard at the corners and no longer pleasant to eat:

Either make yourself some vanilla ice-cream and drop it into the mix at the last minute, or buy soft scoop vanilla ice-cream and stir it in and return to the freezer to eat anytime.

Are you a bit bored with potatoes, rice or pasta?

Fancy something different which the children will love (mine do anyway). Try making gnocchi, which are little potato dumplings. They are so easy to make and are fantastic with your favourite pasta sauce. Try this:

500g baked potato
150g plain flour
1 egg yolk
1 tablespoon of oil

Sunday Roast Leftovers

I know the feeling: you opened the fridge door this morning to work out dinner, only to find a bit of pork in there which is too small to feed a family, but too good to chuck away. Well, don't waste it or give it to the dog, make yourself some pork spring rolls for lunch, or for the children to come home to. Here's how:

Leftover Lamb

I have a leg of lamb in the freezer that served my family on Sunday, plus a shepherds pie on Monday. Tuesday I made curried lamb burgers, and they were so nice I thought I would share the recipe. I made 6 burgers and here's what I did:
